Godiva cocktails and pairings

As some of you may know, in addition to publishing SouthFloridaFoodandWine.com I also facilitate food and wine seminars and pairings seminars at Florida International University. This past week I presented [what seems to be] our annual Godiva Vodka and Liqueurs tasting. I have developed a wonderful relationship with the Godiva representatives who have been remarkably supportive of my seminars and the students in the Chaplin School of Hospitality and Tourism Management.

Godiva arranged for me to have sample bottles of their Chocolate Vodka, Chocolate Raspberry Vodka, Chocolate Liqueur, Mocha Liqueur, White Chocolate Liqueur and Caramel Liqueur for the class. I tasted the students on each of the vodkas neat and chilled and then made various cocktails with the vodkas and liqueurs. The premise of the seminar was to introduce the students to the variety of flavors and tastes both in its pure state and mixed to create a more experimental and essence-layered experience as well as to appreciate a flavor-inspired product. It worked on all levels, as I’m sure you can imagine.

The Godiva seminar once again was a big hit with the favorites being the Butter Pecan Milkshake; a fun treat I made up knowing the students would enjoy as they listened to the history presentation of Godiva. All my recipes are made freestyle by pouring according to your own personal taste. The recipe for the Butter Pecan Godiva Caramel Milkshake is

The second favorite of the evening was the 3-Layer Godiva Chocolate Cake Cocktail

Godiva Cocktails

Adding flair and pizzazz to the cocktails was the rimming of the glasses. My school of thought has always been “why do when you can overdo”. I created the cocktails with the WOW! factor in mind by bringing it all together with the chocolate and garnished rims. One of the teaching assistants in the College of Hospitality, Sylvie, melted the chocolate then rimmed and garnished 200 glasses for the seminar as I made the cocktails. I have to say we made quite a team and I certainly could not have done it without her.

And for a fun ending I allowed the students to make-their-own-cordial-ice cream sundae; vanilla ice cream and their choice of Godiva liqueur. Talk about a perfectly sweet ending.
