Dinner at 15 Steps at Eden Roc Miami Beach

Back in October 2011 Jeremy Ford was one of South Florida Food and Wine’s Chef in the Spotlight; a series of interviews loosely based on the Proust Questionnaire. Ford is a protégée of Chef Dean James Max, principle of  DJM RESTAURANTS a full service restaurant consulting company specializing in developing modern farm to table restaurants.

This was the introduction to the spotlight interview I wrote on Ford three years ago: “Jeremy Ford is young, talented, and culinarily inspiring. Given much freedom to develop and create the menus at 3030 Ocean, Ford has taken this opportunity to shine in his own right bringing continued success to this Modern American Seafood Restaurant. Very much like Max, his boss and mentor, Ford is amiable, easy going and gregarious which allows for the muse to flow to from so many channels that it’s nearly impossible to not see this served from chef-artist to dinner-guest’s plate”

Jeremy Ford is the Executive Chef. Now officially on his own, out from the protective wing of Dean Max, Ford is walking his own path and putting his stamp on the South Florida culinary map. There is no question that Ford is a culinary rock star in his own right, he was trained well, he learned well and now he’s going to show you what he can do. If last night’s progressive dinner was any indication of Ford and his team’s talent and where they’re taking the 15 Steps concept, I’ll venture to predict that 15 Steps will be the hot new restaurant on Miami Beach in less than 15 steps. Located within the Eden Roc resort, 15 Steps is open for breakfast, lunch and dinner and Sunday brunch. Parking is validated to $5.
