Somerston Farm and Winery Experience at The Federal Drink & Provisions Miami

The Federal, Food Drink and Provisions is hosting Somerston farm and winery for a five-course wine dinner on Tuesday, April 8 at 7:30 p.m.  Whole lambs, olive oil, honey, herbs, vegetable and wines will be flown in directly from the Somerston property in Napa Valley making this evening a truly a farm-to-table affair; the food presentation will be an innovative snout-to-tail lamb menu created by The Federal chef and owner Cesar Zapata, with wine pairings from the evening’s host, Somerston winemaker Craig Becker. Cost for the dinner is $85 per person, inclusive of tax/gratuity; reservations must be made in advance. Zapata’s menu for the evening is:

Course 1:
Priest Ranch Brut Rose Traditional Method
Charcuterie Board
lamb belly pancetta, head cheese, lamb liver pate, tartar,
assorted pickles/marmalades/mustards

Course 2:
Priest Ranch Grenache Blanc & Somerston Sauvignon Blanc
Warm Spring Vegetable Medley
fiddlehead ferns, morels, fava beans, 63 degree egg, lamb

Course 3:
Centerline Highflyer Syrah Blend
Lamb Ragu & Gnocchi
lamby odds and ends, sheep’s milk ricotta gnocchi,
reduced lamb jus

Course 4:
Priest Ranch Petite Syrah
Board o’Lamb
smoked leg of lamb, grilled lamb bratwurst,
roasted lamb’s head,
braised red cabbage, mustard

Course 5:
Somerston Port Wine
Chocolate & Cheese
assorted textures and flavors

The Federal Drink & Provisions is located at 5132 Biscayne Boulevard Miami in the MiMo district.
