Lunch at Traymore Restaurant and Bar Miami Beach

Some restaurants pull in the beautiful people, some serve beautiful food and a handful can actually do both successfully. Case in point, Traymore Restaurant and Bar at the Metropolitan Miami Beach.

The Metropolitan hotel is owned and operated by the COMO Group, headquartered in Singapore. The Metropolitan is the first venture into the United States for The COMO group. The COMO Group offers luxury with a deep respect for authenticity, thus each of the eleven COMO Hotels and Resorts offer luxury travel experiences with personalized service individually curated to reflect its location. COMO’s cuisine is varied and outstanding, ranging from the Thai restaurant nahm in Bangkok, to the acclaimed Nobu in London to Traymore in Miami Beach under the talented and watchful eye of Executive Chef, Jonathan Lane.

With the COMO pedigree behind it, Traymore Restaurant and Bar has spared no expense, and left no stone unturned in seeking out and obtaining some of the best culinary talent in the world today. Executive Chef Jonathan Lane comes to COMO after honing his talent and skills for a decade with the Four Seasons Hotels as well as the critically acclaimed Benny’s Chop House in Chicago. Complementing the talent of Lane is Emanuel Alves the property’s Master Chocolatier and Executive Pastry Chef who studied under the tutelage of Chef Nicolas Serrano and Frederic Bau at the Ecole du Grand Chocolat Valrhona, and Peruvian-born ceviche chef, Miguel Puelles,who allows the influence of his culture and heritage to impact the style of his cooking and his culinary techniques. The New York Times has dubbed Puelles one of the best ceviche chefs in Miami.  Puelles’ culinary lineage includes Chef Michelle Bernstein and Chef Daniel Boulud.

Put all of this impressive culinary stock and descent together and you’ve go the makings for one fine dining experience. Traymore Restaurant and Bar is housed in the extended lobby of the Metropolitan. Chic and cosmopolitan; spacious with clean contemporary lines Traymore exudes an urban beach ambiance.

Mirroring the urban beach ambiance is Jonathan Lane and teams’ menu. The menu is seafood dominant with a smattering of indulgent offerings such as New York striploin and Chicago handcut fries. But to be in the presence of such dynamic culinary collaboration you would be remiss not to partake in whimsical dishes such as the Seafood Stew (Cioppino) with fennel and feta cheese

and the ever-so elegant fried Cod with celeriac remoulade and tarragon and caper mayonnaise

The ceviche of the day is not to be missed, no matter what other meal choices you make; to experience one of  Miguel Puelles’ ceviche, it to have experienced ceviche.

Once the food arrived, I truly was not sure if I wanted to just look at it or eat it. The presentations were stunning, yet inviting, nothing too beautiful that I did not want to eat, but for that split second, I did think about it. The desserts however were simply, works of art. Painstaking works of art. No detail was overlooked in the creating of the grand finale. My favorite was the sesame cannoli with passionfruit cream and mango salad, there were so many flavors and textures  going on in one dish, it was a kaleidoscope for the eyes and palate.

Pina colada layer cake, can simply make you drunk with its beauty.

The COMO brand is a luxury brand with its very specific worldwide clientele, surprisingly, the pricing at Traymore is not as luxury as you would expect but rather in line with other restaurants of its caliber; Appetizers and salads $10-$36, entrees $20-$38, sides $6-$8, desserts $9-$12. Valet parking is the nemesis of all in South Florida, valet will be validated to a discounted rate when dining at Traymore.
