Chef’s Tasting Menu at Coast, Edgewater Beach Hotel Naples

The Edgewater Beach Hotel Naples sits unassuming, yet stately on seven miles of unobstructed beachfront property on the Gulf of Mexico. The Edgewater is an icon with guests and employees, and has been for 30 years. It is the attention to detail, the genuine hospitality, and the true professionalism of the staff that elevates this quiet little gem to its highly regarded status with repeat guests and the winning over of new ones.

The Edgewater is exclusively all-suite, spacious and welcoming for couples and family. The suite amenities leave you wanting for naught, but just in case there is something you, want, need, or desire, there is milk and homemade cookie service daily from 2-5pm in the lobby; if you call the concierge, they’ll bring it to you, to be enjoyed in your room or on your gulf-view balcony. If you’re a cigar smoker, they’ve got that covered too, complete with cutter, lighter and ashtray. Room service is a given but with prior arrangements, a chefs tasting menu with wine pairings can be created and served to you in the privacy of your suite, or if you prefer, a private table set on the beach complimented by a famed Florida west-coast sunset. And this is exactly what we did, an 8-course tasting menu, with a magnificent view of the gulf.

This dinner was one of those times when everything just fell into place and was simply perfect; the view, the company, and the meticulous attention paid to the food by the chef and his team, as well as the servers.

Bill Zimmer Executive Chef at the Edgewater Beach Hotel keeps his menus simple, and approachable highlighting fresh, seasonable and local foods. Zimmer has found this formula to be a home-run with guests, whether they are locals or out of the area visitors. Zimmer doesn’t overdo, no sauces covering up or taking away from the food, and no items you need a culinary thesaurus to determine what it is; his menus are straight and to the point, and in all of its simplicity, showcasing the natural flavors and appeal of the food.
