Chateau Rollan de By Vintner Dinner at Pistache French Bistro West Palm Beach

PISTACHE French Bistro West Palm Beach will host a wine pairing dinner on Tuesday, September 15, 2015 at 7:30pm with the wines of Chateau Rollan de By. Special guest Matthieu Guyon, son of Chateau Rollan de By owner Jean Guyon, will serve as the evening’s host, providing the pairings for the amuse and four course dinner. The cost is $75 per guest, plus tax and 20% gratuity. The wine pairing menu is as follows:

Amuse: Foie Gras Torchon: Pear, brioche, sauternes gelee paired with Chateau de By, 2010

1st course: Heirloom Tomato & Watermelon Salad: Baby artisan tomatoes, compressed watermelon, English cucumber, goat cheese mousse, toasted almonds, arugula, dijon vinaigrette paired with Chateau Greysac, Medoc, France, 2010

2nd course: Crispy Duck Leg Confit: Braised le puy lentils, roasted mushrooms, pearl onions, lardons, shaved garden vegetables, black truffle jus paired with Chateau Rollan de By, Medoc, France, 2010

3rd course: Pan Roasted Filet of Beef: Pommes pont neuf, watercress, caramelized shallot jus paired with Chateau Haut-Condissas, Medoc, France, 2009

4th course: Vanilla Crème Brulee: Fresh Vanilla Bean, Strawberry paired with Vignobles Lajonie, Chateau Bellevue, Monbazillac, 2011
